So, the designer that I was working with and creating layouts for has decided to call it quits. So, now I am up in the air with regards to products. That coupled with the stressful time I had getting my books printed at Costco this Christmas has really gotten me thinking that there has to be something out there for me to do. Then the manager at Costco tells my husband when he returns $200 worth of books because they were printed wrong that I should be doing this for a living. Then my sister tells me she has no time to do her own scrapbook and could I help her out....so....I have decided to give it a go. I am going to open

Low Sugar Strawberry Jam

Picking your strawberries. Here is my friend Nancy picking. I picked 6 flats of organic strawberries at Bolles Organic Farm.

Aren't they pretty. Wash them up, and then stem and hull them. Then crush them up.

Supplies:

Place lids in warm water to help soften rubber.

Place water in your canner and start to heat up.

Cast of characters:

Splenda or Sugar

More Characters:

8 oz jars

package of SUGAR FREE/LOW SUGAR Pectin

Last of Characters:

Bowl to mash strawberries

Potato Masher

Ladle

Canning accessory kit - I bought mine at Fred Meyer

Boil fruit and then place in jars. Remember to leave head space.

So pretty when they come out of the canner

Sugar Free Strawberry Jam

3 c strawberries (approx 3 pints)

3/4 c water

1 box low sugar fruit pectin

1/2 c splenda or sugar

Bring boiling water canner, half full with water to a simmer. Pour boiling water over flat lids in saucepan and turn off heat. Let stand in hot water until ready to use.

Stem and crush strawberries; place 3 cups of the crushed strawberries in 6-8 quart sauce pot. Stir in water. Add pectin, stirring until well blended.

Bring mixture to full rolling boil (boil that doesn't stop when stirred) on high heat, stirring constantly. Box 1 minute, stirring constantly. Add Splenda or sugar. Skim off foam if desired.

Ladle into jar, filling to 1/8 inch of the top. Wipe jar rims and threads. Cover with lids and rings. Tighten rings until finger tip tight. Place jar in canner. Water must cover jars by 1-2 inches. Add more water if necessary. Cover and bring to a boil.

Once boiling, process for 10 minutes. Remove jars and place upright on towel to cool completely. I also cover with towel. After jars cool, check seals by pressing middle of lid with finger. (if lid springs back, lid is not sealed and you must refrigerate).

The Middle Place by Kelly Corrigan is part memoir of her childhood and her closeness with her dad and part her journey through cancer. It is billed as a book on how we when we grow up we are adults/parents, but part someones child and how we get over that to just be an adult.

I found this book to be a very easy and short read. Nothing too taxing, but at the same time I am not sure the book every really shows us how she made the change from the two part world of child/parent to being a real adult. I love how close she and her dad are and how they support each other through both her cancer and his. You can feel the love coming off the pages. Maybe this is more about her memories of him, since he is battling cancer for the 4th time, then it really is about her.

All in all, good read and recommended.

Big Four Ice Caves

Today myself, Ryan, Sam, Erin, Connor, Ashlyn, Wyatt and Checkers took a hike to try and find the Big Four Ice Caves. Unfortunately, they were closed due to the recent snow fall.

This year, I am going to try the following:

1. Continue to try and get in shape and eat right (action=20/20 program)

2. To read one non-fiction book a month (action = get list going at library)

3. Try a new craft at least once a quarter (action = see "crafts" favorites folder)

4. To make time to craft once a month (action = set time on calendar)

5. To try again to send one snail mail a month (action = make cards & set recipient)

Out of all of these, #4 & #5 will be the most difficult. If you remember last year I made #5 a goal too....I got through the first half of the month, but summer came and it fell by the wayside. I am hoping by making the cards and putting in my calendar that I can do better at this.

I took a cupcake decorating class last night and it reminded me how much I LOVE to bake and decorate. We are sitting here for family movie night watching Swiss Family Robinson. I LOVE this movie. What is it about it that you like? Hmm, that is an interesting question. This movie was released in 1960, way before I was even born. I think it might be the tree house. I always wanted one. A place that was just mine, up in the trees where no one could bother me. Anyway, it will be interesting to see how the remake scheduled for 2012 will be. Why mess with a good thing?

So, I got a new computer and it has taken a while for it to get up and running. Needless to say, it does not have all my programs on it....most notably what is missing is my photoshop elements. I am going crazy wanting to scrapbook and I can't. Hence all the other crafts lately. The problem....um.....we lost the disk for Photoshop...so, I am hoping to get another one...this time CS4. I am probably jumping way ahead of what my skills in both photography and editing can currently do with this purchase, but we can get a good deal on it from a friend....so, I am hoping to jump in with both feet when we finally get around to purchasing it.

Yes, the renovation is still going on. WE have finished with the downstairs bathroom, with the exception of two custom signs from Country Workshop that are still on order. Once they are here and hung, I will get pictures up.

My current problem is what picture to hang in my entry foyer. I have narrowed it down to the following three by Jude McConkey. I don't know why they caught my eye, I don't live anywhere near these places, but I guess because I have an uncle that lives in the UP of Michigan they touch a cord with me.

So, help. I need your opinions on which one is best??? My walls are painted Adobe Beige and I have Victorian type sconces that the picture needs to fit between.

I would probably have this last one turned vinitage like the one above it.

Saturday's Adventures of Outdoor Boy

Today's adventures included a ride on the ferry, a 2.25 mile hike, and then playing on the beach at South Whidbey State Park.

The view from the Ferry was amazing on such a "blue bird" day.

This tree grove was on our hike. Wyatt was still walking at this point, but later on he decided that he had enough and wanted me to carry him on my back. Lesson learned, Wyatt is only good for about the first mile and a half.

After we got done with the hike, we had another 1/2 mile trail to get down to the beach where we ate our picnic lunch and then played in the sand. Wyatt and his friend Sam loved to build in the sand and dig up all the rocks. They didn't want to leave, but it was time to catch the ferry back home....but first we had to find some place for icecream....all that hiking deserves a reward. Would you belive that there was no place open for ice cream...I ended up at the grocery store of all places.

Today finds outdoor boy exploring near the Mukilteo Lighthouse. Too bad it was closed and we could not go inside. Instead we got to walk along the beach and throw rocks into the ocean. He was quite the stinker today and would not allow me to take any full on face shots. He was much too busy throwing rocks. I must say, that he has a very good arm and looks to probably be our sports child. Only time will tell, but he was very disappointed when it was time to leave. Tomorrow we will be back down here to take the Ferry across to Whidbey Island and visit the state park there hoping to catch a glimpse of some whales.

So today Wyatt and I went down to my friends new bead store. Lady Lorelie's is right along Lake Union and has the most amazing view out the back patio. This picture was taken from there. As soon as we started over the bridge at he could see the water and the boats all Wyatt was says was "I go boat!!". He was so excited to be able to walk down the docks and look at each of the boats. He really liked the ones with flags.

Sick of Being Sick

I have had it! I am sick of people being sick!!!

We have been sick since Saturday night with the stomach flu. With only one bathroom, this poses quite a problem. However, most of us are over it....all but Connor. Who is hungry, but I think afraid to eat for fear of throwing up, which increases his anxiety and then he does throw up. If I never see him lean over a bucket again it will be too soon...

I never thought that at 30+ years of age I would ever utter those words again, but here I am....I am going to be a business intern for my friend Rose who started her new photography business. I think I will be pretty good at it and who knows maybe it will turn into a paying job. Right now it is Monday's from 12-3 and then working from home in the evenings. I am hoping that some of her talent rubs off on me and my vacation pictures start to turn out better, which should lead to better scrapbooks.

Now the hard part begins. I am so out of date, on almost everything clothing related. I was looking at my closet yesterday and there is almost no business type clothing in there. I do have a few things and since in office is only 1 day a week I am going to try to build around them, but I have such horrid taste...ok, let us be honest here, I am really, really, really cheap when it comes to things for myself. I really need someone to take me shopping and turn me into a little hipper person. I started with some jewerly that I got for Christmas and my MIL gave me $50 (THANKS), so I am hoping to hit the mall next week and spend that on something that makes me look nice.

jMango & Coconut Rice Wontons

1 package of Wonton Skins

2 Mangoes, diced

2 cans Coconut Milk

1 cup of Jasmine Rice

1/2 of a Vanilla Bean, scraped

1/2 c sugar

1 eggs, wisked

Canola oil for brushing

Mix rice with Coconut milk, vanilla bean scrapings and sugar. Place in a pot with a lid and bake at 350 for 1 hour or until cooked. Mix in Mango and it will look like picture above.

Lay the Wonton skins diagonal and fill with mixture. Roll them up like a burrito and brush each tip with egg so that they stay glued together. Brush each with oil and bake at 350 for approx 10 minutes or until browned.
